Casein is the main protein found in milk. It is a phosphoprotein, meaning it contains phosphorus. It is not soluble in water and forms a suspension called micelles in milk. Casein provides essential amino acids, calcium, and phosphorus to young mammals. It is mainly a nutrient protein and has a flexible structure without a fixed shape.

Albumin is a globular protein found in egg whites and blood plasma. It dissolves easily in water and becomes solid when heated. In the blood, albumin helps maintain osmotic balance and carries hormones, fatty acids, and other substances. In eggs, it acts as a food source for the growing embryo. Albumin has a compact, rounded structure.

Keratin is a fibrous protein found in hair, nails, feathers, horns, and the outer layer of skin. It is tough, insoluble in water, and provides strength and protection to the body. Keratin is rich in sulfur-containing amino acids like cysteine, which form strong disulfide bonds. These bonds make it hard and resistant to stretching and damage.

In simple terms, casein provides nutrition, albumin helps in transport and nourishment, and keratin gives strength and protection to body parts.
